Harvest Soup w/ Local Asiago Rolls

Unpack Your Kit Ingredients
extra virgin olive oil*
chopped local butternut squash (Bates County Produce)
chopped local pumpkin (Bates County Produce)
minced roasted garlic
organic beef broth (Clearly Organic)
baby spinach leaves
local asiago rolls (Farm to Market)
*If the oil has solidified in the fridge, place the sealed container in warm water. It will return to a liquid.

salt and pepper to taste
Step 1: Sauté the Veggies
WARM the olive oil in a large pot over medium heat.
ADD the leeks, carrots and celery.
SAUTÉ for 3–5 minutes until tender and lightly caramelized.
SEASON to taste with salt and pepper.
Step 2: Add Squash, Pumpkin, Herbs and Broth
ADD the butternut squash, pumpkin, thyme, parsley and roasted garlic.
STIR in the beef broth.
SIMMER for about 10 minutes or until the squash is fork-tender.
Step 3: Stir in the Remaining Ingredients
ADD the bulgur wheat, baby spinach and tomato and stir well.
SIMMER another 20 minutes over medium heat.
Step 4: Serve It Up
TASTE and re-season with salt and pepper as needed.
SERVE the soup with local asiago rolls and enjoy!
★TIP: If desired, you can warm the rolls in the oven before serving.
