Lemon Herb Chicken w/ Orzo Pasta

Unpack Your Kit Ingredients
local, pasture-raised chicken breast (David's Pasture)
lemon olive oil*
orzo pasta (InHarvest)
extra virgin olive oil*
chopped seasonal veggies (Bates County Produce)
cheese curds (Jisa's Farmstead Cheese)
salad dressing (Garlic Expressions)
*If the oil has solidified in the fridge, place the sealed container in a cup of warm water.

Step 1: Roast the Chicken
PREHEAT the oven to 425 degrees.
SPRAY a baking sheet with nonstick spray.
PLACE the chicken breasts on the baking sheet.
DRIZZLE with lemon olive oil and sprinkle with Italian seasoning, garlic salt and lemon pepper.
BAKE for 20–25 minutes or until the internal temperature of the chicken reaches 165 degrees.
★TIP: Stick a meat thermometer into the thickest part of the chicken breast to check the temperature.
Step 2: Boil the Orzo Pasta
BOIL 4 cups water and 1 teaspoon salt in a medium saucepan.
STIR in the orzo pasta and cook until al dente, about 10 minutes.
Step 3: Sauté the Veggies
While the orzo pasta is boiling...
WARM the extra virgin olive oil in a large skillet over medium heat.
STIR in the onion, carrot, celery and seasonal veggies.
SEASON to taste with salt and pepper.
SAUTÉ until tender, about 10 minutes.
Step 4: Serve It Up
DRAIN the orzo pasta and combine with the veggies.
STIR in cheese curds and Garlic Expressions dressing to your liking.
★TIP: The cheese curds will be partially melted in the orzo pasta. Delicious! If you prefer unmelted cheese, allow the pasta to cool in your fridge for a few minutes before stirring in the cheese curds, or omit them entirely.
SERVE with the chicken and enjoy!
