Mediterranean Chicken w/ Honey Roasted Veggies

Step 1: Bake the Chicken and Veggies
PREHEAT the oven to 425 degrees.
WASH the lemon and slice it into rings.
PLACE the chicken breast on a greased baking sheet and coat both sides with lemon olive oil. Season to taste with salt and pepper and top with lemon rings.
ARRANGE the carrots and sweet potatoes on the other baking sheet. Season to taste with cumin, salt and pepper. Drizzle with olive oil and toss gently to combine.
BAKE for 15–20 minutes or until the internal temperature of the chicken reaches 165 degrees and the veggies are fork-tender. Depending on your oven, the veggies may need an additional 5 minutes of roasting time.
Step 2: Mix the Mediterranean Salsa
COMBINE the feta cheese, grape tomatoes, kalamata olives, parsley, oregano and lemon juice in a medium bowl.
Step 3: Serve It Up
STIR the chicken pan juices into the Mediterranean salsa.
DRIZZLE the roasted veggies with honey.
SERVE the chicken topped with salsa and veggies on the side. Enjoy!
