Meatball Sliders w/ Couscous Chopped Salad

Unpack Your Kit Ingredients
local sheep's milk cheese (Green Dirt Farm)
mixed salad greens
chopped red onion
chopped sugar snap peas
salad dressing (Garlic Expressions)
Grab Your Cookware and Staples
medium saucepan with lid
large platter or salad bowl
Step 1: Warm the Meatballs
STIR together the pre-cooked meatballs and marinara in a medium saucepan.
COVER with a lid.
WARM over medium heat for 15 minutes.
Step 2: Cook the Couscous
While the meatballs are warming…
BOIL 3/4 cup water over high heat in a small pot.
STIR in the couscous and cover with a lid.
REDUCE heat to low.
COOK for 8–10 minutes or until all liquid is absorbed. Then remove from heat and fluff the couscous with a fork.
Step 3: Prepare the Salad
MIX the asiago cheese, sheep’s milk cheese and pumpkin seeds in a small bowl.
ARRANGE the couscous, mixed salad greens, zucchini, red onion, tomato, sugar snap peas and cheese/pumpkin seed mix in rows on a platter or in a shallow bowl.
Step 4: Serve It Up
SLICE each bread roll horizontally with a serrated knife.
SPOON two meatballs in each bread roll.
SPRINKLE with parmesan cheese and chopped parsley.
SERVE with the salad and salad dressing. Enjoy!
