Meatball Sub w/ Couscous Chopped Salad

Unpack Your Kit Ingredients

local meatballs (Circle B Ranch)
local marinara (Cascone's)
whole wheat hoagie buns
parmesan cheese
chopped parsley

couscous (InHarvest)
asiago cheese
local sheep's milk cheese (Green Dirt Farm)
pumpkin seeds
mixed salad greens
chopped zucchini
chopped red onion
chopped tomato
chopped sugar snap peas
salad dressing (Garlic Expressions)

Grab Your Cookware and Staples

2 medium saucepans with lids
small bowl
large platter or bowl

Step 1: Warm the Meatballs

STIR together the meatballs and marinara in a medium saucepan.

COVER with a lid.

WARM over medium heat for 15 minutes.

Step 2: Cook the Couscous

While the meatballs warm…

BOIL 3/4 cup water over high heat in a medium saucepan.

STIR in the couscous and cover with a lid.

REDUCE heat to low.

COOK for 8–10 minutes or until all liquid is absorbed. Then remove from heat and fluff the couscous with a fork.


Step 3: Prepare the Salad

MIX the asiago cheese, sheep’s milk cheese and pumpkin seeds in a small bowl.

ARRANGE the couscous, salad greens, zucchini, red onion, tomato, sugar snap peas and cheese/seed mix in rows on a platter or in a shallow bowl.

Step 4: Serve It Up

SPOON 3–4 meatballs into each hoagie bun.

SPRINKLE with parmesan cheese and chopped parsley.

SERVE with the salad and dressing. Enjoy!
