Spicy Broccoli and Tofu Stir-Fry w/ Jasmine Rice (Vegetarian)

Unpack Your Kit Ingredients

MAIN: 
local extra firm tofu (Good Natured Family Farms)
garlic salt
oriental five spice (Marshall's Creek)
hot chili oil* (KA-ME)
extra virgin olive oil*
fresh mixed veggies (red onion, bell pepper, snow peas)
shredded purple cabbage
broccoli florets
roasted garlic
ginger paste (Gourmet Garden)
basil paste (Gourmet Garden)
chopped green onion
hoisin sauce (KA-ME)

SIDE:
jasmine rice (InHarvest)

*If the oil has solidified in the fridge, place the sealed container in a cup of warm water.


Grab Your Cookware and Staples

baking sheet
non-stick spray
cutting board and knife
medium saucepan with lid
large skillet or wok with lid
medium skillet with lid
salt and pepper


Step 1: Roast the Tofu

PREHEAT the oven to 450 degrees and spray a baking sheet with non-stick spray.

CUT the tofu into bite-sized cubes.

PLACE the tofu on the baking sheet and sprinkle with garlic salt, oriental five spice and 2 tablespoons hot chili oil. Mix gently to combine.

ROAST on the top rack until the tofu is crispy, about 20 minutes.


Step 2: Prepare the Rice

While the tofu is roasting…

BOIL 1-1/2 cups water in a medium saucepan over high heat.

STIR in the jasmine rice, then cover with a lid and reduce heat to low.

COOK until the liquid is absorbed, about 10 minutes.

 


Step 3: Sauté the Mixed Veggies

WARM the extra virgin olive oil in a large skillet or wok over medium-high heat.

STIR in the fresh mixed veggies and sauté until crisp-tender, about 3–5 minutes.

STIR in the shredded cabbage and sauté another 5 minutes.

SEASON to taste with salt and pepper.

TRANSFER to a large bowl and cover with a lid to steam.


Step 4: Sauté the Broccoli

WARM the remaining hot chili oil in the same large skillet over medium-high heat.

ADD the broccoli florets and sauté until they begin to brown but are still bright green and crisp-tender.

ADD the mixed veggies back to the skillet.

STIR in the roasted garlic and ginger paste.

COVER with a lid and remove from heat to steam for 5 minutes or until tender.


Step 5: Serve It Up

ADD the basil paste, green onions and hoisin sauce to the sautéed veggies. Stir to combine.

GENTLY STIR in the roasted tofu.

SERVE over the cooked jasmine rice and enjoy!
