Baked Orzo w/ Tomato & Mozzarella Pearls

organic extra virgin olive oil packets*
chopped eggplant
mirepoix (carrot, celery, onion)
organic vegetable broth concentrate (Savory Choice)
roasted minced garlic
tomato paste
orzo pasta (InHarvest)
garlic salt
oregano
local tomato
mozzarella pearls
grated parmesan
local rolls (Farm to Market Bread Co.)
butter balls

*If the olive oil has solidified in the fridge, return to liquid by running under warm water.


FROM YOUR KITCHEN

large skillet
liquid measuring cup
9x5 baking dish (loaf size)
cutting board and knife
non-stick spray
salt and pepper


1. SAUTÉ THE VEGGIES

PREHEAT the oven to 400 degrees.

EMPTY contents of olive oil packets in a large skillet over medium-high heat.

ADD the eggplant and mirepoix. Sauté until golden brown and soft, about 8 minutes. (★ What’s mirepoix? See note below.)

SEASON to taste with salt and pepper.

★ Mire-Whaaaaa?  That’s mirepoix, pronounced “meer-pwah.” This is a fancy French word for diced veggies (typically carrot, celery and onion) that add a base layer of flavor. Mirepoix is typically cooked over gentle heat to sweeten and soften the dish. 


2. ADD MORE TASTY INGREDIENTS

MIX the vegetable broth concentrate with 1 cup of hot water in a liquid measuring cup. Set aside.

STIR in the garlic, tomato paste and orzo pasta, and cook an additional 2 minutes.

TURN OFF the heat and stir in the garlic salt, HALF the oregano and vegetable broth. 


3. ASSEMBLE & BAKE THE PASTA

SPRAY the baking dish with non-stick spray.

POUR the pasta mixture into the baking dish.

SLICE the tomato on cutting board.

LAYER the mozzarella pearls onto the pasta, then sprinkle with parmesan cheese and top with tomato slices.

SPRINKLE with the remaining oregano and season to taste with salt and pepper.

BAKE for 30 minutes.


4. SERVE & ENJOY!

SERVE the pasta with a roll slathered with butter. You’ve earned it!
