Baked Orzo w/ Tomato & Mozzarella Pearls

Unpack Your Kit Ingredients

organic extra virgin olive oil packets* (Rustico) 
chopped eggplant
mirepoix (carrot, celery, onion)
minced garlic
tomato paste
orzo pasta (InHarvest)
garlic salt
organic vegetable broth concentrate (Savory Choice)
local tomato (Suntastic Farms)
mozzarella pearls
grated parmesan
local roll (Farm to Market Bread Co.)

*If the olive oil has solidified in the fridge, return to liquid by running under warm water.

Step 1: Sauté the Veggies

PREHEAT the oven to 400 degrees.

EMPTY contents of extra virgin olive oil packets in a large skillet over medium-high heat.

ADD the eggplant and mirepoix. Sauté until golden brown and soft, about 8 minutes. (What’s mirepoix? See note below.)

SEASON to taste with salt and pepper.


That’s mirepoix, pronounced “meer-pwah.” This is a fancy French word for diced veggies (typically onion, celery and carrot) that add a base layer of flavor. Mirepoix is cooked over gentle heat to sweeten and soften without browning or caramelization. 

Step 2: Add More Tasty Ingredients

MIX the vegetable broth concentrate with 1 CUP of hot water in a small bowl. Set aside.

STIR in the minced garlic, tomato paste and orzo pasta, and cook an additional 2 minutes.

TURN OFF the heat and stir in the garlic salt, HALF the oregano and vegetable broth. 

Step 3: Assemble and Bake the Pasta

SPRAY the baking dish with non-stick spray.

POUR the pasta mixture into the baking dish.

SLICE the tomato.

LAYER the mozzarella pearls onto the pasta, then sprinkle with parmesan and top with tomato slices.

SPRINKLE with the remaining oregano and season to taste with salt and pepper.

BAKE for 30 minutes.

Step 4: Serve It Up

SERVE the pasta with a local roll, slathered with butter. You’ve earned it!
