Bison Cheeseburger Quesadilla w/ Green Apple Guacamole

Ready in 25 Minutes


IN YOUR BOX

local ground bison (Krehbiels Specialty Meats, Inc.)
local cheddar cheese (Jisa's Farmstead Cheese)
chopped onion
local duck fat flour tortillas (Caramelo)
butter
local ketchup (BoysGrow)
avocado
green apple
diced hatch chiles
chopped cilantro
lime juice crystals
tortilla chips (Food Should Taste Good)


FROM YOUR KITCHEN

cutting board and knife
2 medium bowls (1 with a lid or plastic wrap)
1 small bowl
large skillet
large spoon
salt and pepper


1. MAKE THE GUACAMOLE

CUT the avocado in half on cutting board and remove the pit. Scoop out the avocado into a medium bowl and mash until smooth.

WASH the green apple and dice HALF of it on same cutting board. (Save the rest for a snack!)

MIX the lime juice crystals with 1 tablespoon of warm water until dissolved in a small bowl.

STIR the diced apple, lime juice, hatch chiles, cilantro, and HALF the onion into the avocado.

SEASON the guacamole with salt and pepper to taste and cover with a lid or plastic wrap. Set in the fridge until you’re ready to serve.


2. PREPARE THE TORTILLAS

COOK tortillas directly over high gas flame until charred on both sides. If using an electric stove, melt 1 butter ball over high heat in large skillet and cook tortillas 3 at a time until browned on both sides, just a few minutes.

REPEAT with the remaining tortillas.

3. COOK THE BISON

COOK bison and rest of onion in large skillet over medium heat until completely browned and breaks apart with a large spoon as it cooks.

SEASON to taste with salt and pepper.

TURN OFF heat and add cheese to bison, stirring until melted.


4. FILL THE QUESADILLAS & EAT

FILL each cooked tortilla with desired amount of meat and fold over. Slice into bite-sized pieces or eat like a taco.

SERVE with local ketchup and guacamole & tortilla chips. Enjoy!
