Bison Cheeseburger Quesadilla w/ Green Apple Guacamole

2 medium bowls (1 with a lid or plastic wrap)
1 small bowl
salt and pepper
1. MAKE THE GUACAMOLE
CUT the avocado in half on cutting board and remove the pit. Scoop out the avocado into a medium bowl and mash until smooth.
WASH the green apple and dice HALF of it on same cutting board. (Save the rest for a snack!)
MIX the lime juice crystals with 1 tablespoon of warm water until dissolved in a small bowl.
STIR the diced apple, lime juice, hatch chiles, cilantro, and HALF the onion into the avocado.
SEASON the guacamole with salt and pepper to taste and cover with a lid or plastic wrap. Set in the fridge until you’re ready to serve.
2. COOK THE BISON
COOK the bison in a large skillet over medium heat until completely browned and breaks apart with a large spoon as it cooks.
TRANSFER the bison to a medium bowl.
3. MAKE THE QUESADILLA FILLING
ADD the cheddar cheese and remaining onion to the bowl.
SEASON to taste with salt and peppe and stir all that good stuff together.
4. PREPARE & COOK THE QUESADILLAS
SPOON equal amounts of the bison cheeseburger mixture into the flour tortillas.
FOLD the tortillas in half and press down lightly.
MELT the butter over medium heat in the same large skillet used to brown the bison.
ADD the tortillas to the skillet. (If you cannot fit all the tortillas into one skillet, cook in two batches.)
COOK each side for 2-3 minutes until lightly browned.
5. SERVE & ENJOY!
CUT the quesadillas into wedges and serve with guacamole, ketchup and tortilla chips on the side.
