Chicken & Dumplings…Like Grammy Used to Make

cutting board and knife
liquid measuring cup
medium bowl or stand mixer bowl
pastry cutter or stand mixer paddle (or food processor)
large dutch oven or stockpot
liquid measuring cup
2 large spoons
salt and pepper
1. BAKE THE CHICKEN
PREHEAT the oven to 400 degrees.
PLACE chicken tenders on greased baking sheet.
PRE-BAKE chicken on middle rack for 10 minutes or until cooked though (no pink inside) and remove from oven.
CUT baked chicken into bite-sized pieces on cutting board. Set aside.
2. MAKE THE DUMPLING DOUGH
WHISK together the buttermilk and egg in liquid measuring cup.
ADD dumpling mix to medium bowl or stand mixer bowl. Add butter and cut with pastry cutter or stand mixer fitted with paddle attachment (or a food professor) until dumpling mix resembles a coarse meal.
POUR buttermilk and egg mixture into dumpling mixture and mix until just combined to make a rough dough.
3. MAKE THE CHICKEN BROTH
WARM olive oil in large dutch oven or stockpot over medium-high heat.
ADD mirepoix and sauté until golden, season with salt and pepper.
(★ What’s mirepoix? See note below.)
ADD chicken, 4 cups of water, chicken broth concentrate and parsley to sautéed mirepoix. Re-season with salt and pepper. ★TIP: For soupier chicken & dumplings, add more water to broth.
★ Mire-Whaaaaa? That’s mirepoix, pronounced “meer-pwah.” This is a fancy French word for diced veggies (typically carrot, celery and onion) that add a base layer of flavor. Mirepoix is typically cooked over gentle heat to sweeten and soften the dish.
4. PUT IT ALL TOGETHER, SERVE & ENJOY!
FORM dumpling dough into 2-3 inch balls with 2 large spoons and drop onto surface of chicken broth.
REDUCE heat to medium-low, cover with lid and cook for 15 minutes or until dumplings are cooked through. Taste and season as needed with garlic salt and pepper.
SERVE the chicken and dumplings in bowls and enjoy!
