Fiesta Cheesy Corn Soup w/ Banana Bread

butter balls
diced poblano and serrano chilies
mirepoix (carrot, celery, onion)
roasted minced garlic
organic vegetable broth concentrate
organic whipping cream
manchego cheese
local cheddar cheese (Jisa’s Farmstead Cheese)
local banana bread (Smart Cookies)
local honey (Jordy’s)

FROM YOUR KITCHEN

paring knife and cutting board
large stockpot with lid
4-cup liquid measuring cup
small microwave-safe bowl
salt and pepper


1. SAUTÉ THE CORN, CHILIES & VEGGIES

SAUTÉ corn on high heat in large stockpot until kernels are charred, about 5 minutes.

ADD 10 butter balls to corn and melt, reducing heat to medium.

ADD poblano and serrano chilies and mirepoix. Reduce heat to medium-low. Season with salt and pepper and cover with lid. Sauté until mirepoix softens, about 5 minutes.
(★ What’s mirepoix? See note below.)

ADD garlic and sauté until just fragrant, about 1 more minute.

★ Mire-Whaaaaa?  That’s mirepoix, pronounced “meer-pwah.” This is a fancy French word for diced veggies (typically carrot, celery and onion) that add a base layer of flavor. Mirepoix is typically cooked over gentle heat to sweeten and soften the dish. 


2. ADD THE BROTH & CHEESE

MIX the vegetable broth concentrate with 3 cups hot water in a liquid measuring cup. Add to stockpot and stir to combine.

ADD whipping cream, manchego cheese and cheddar cheese. Stir to combine and bring to a boil, then remove from heat.

RE-SEASON to taste with salt and pepper.


3. MAKE HONEY BUTTER, SERVE & ENJOY!

HEAT remaining butter in small microwave-safe bowl till soft and add desired amount of honey. Mix well.

WARM banana bread in microwave and cut into slices on cutting board. (Take banana bread out of pan before microwaving!)

SERVE soup with croutons, if desired, along with the banana bread slices and honey butter.
