Step 1: Boil the Pasta
PREHEAT the oven to 350 degrees.
BOIL 6 cups water over high heat in a large saucepan.
COOK the elbow pasta until al dente, about 8 minutes.
DRAIN the pasta and set aside.
Step 2: Make a Roux
MELT butter in the same saucepan over medium heat.
WHISK in the flour to make a roux. (This will thicken the sauce.)
ADD the milk according to the number of servings in your dinner kit:
- 2 Servings: 1/2 cup milk
- 4 Servings: 1 cup milk (full pouch)
- 6 Servings: 1-1/2 cups milk
WHISK until the mixture begins to thicken.
Step 3: Mix the Sauce and Pasta
STIR in the cheddar cheese until melted.
STIR in the pesto.
SEASON to taste with garlic salt.
ADD the cooked pasta and stir to combine.
Step 4: Layer the Pasta
SPRAY the baking dish with non-stick spray.
POUR the pasta sauce in the bottom of the baking dish.
LAYER half the mozzarella cheese, half the tomatoes and half the pasta mixture.
REPEAT these layers.
SPRINKLE with parmesan cheese.
Step 5: Bake and Serve
BAKE for 20 minutes or until heated through.
SERVE and enjoy.
