Grown-Up Grilled Cheese w/ Spicy Tomato Soup

FROM YOUR KITCHEN

large cast iron skillet or non-stick pan with lid
1. COOK THE COUSCOUS
BOIL ¾ cup of water over high heat in small saucepan.
STIR in couscous and cover with lid.
REDUCE heat to low.
COOK for 8 minutes or until all liquid is absorbed. Remove from heat.
2. MAKE THE TOMATO SOUP
WARM olive oil in large stockpot over medium heat.
ADD onion and sauté until lightly browned, about 5 minutes.
ADD tomatoes and cook for 5 minutes more.
ADD garlic and red pepper flakes. Stir to combine. ★TIP: For less spiciness, use less red pepper flakes.
MIX vegetable broth concentrate with 2 cups hot water in liquid measuring cup.
POUR vegetable broth into stockpot and bring soup to a boil.
COVER stockpot with lid, reduce heat to medium-low and simmer for 10 minutes.
ADD cooked couscous and coconut milk to soup. Simmer to combine and season to taste with salt and pepper.
3. IT’S GRILLED CHEESE TIME!
SOFTEN the compound butter to room temperature, heat in microwave if necessary. Spread the butter on one side of each slice of brioche bread.
WARM the large cast iron skillet or non-stick pan over medium-high heat.
PLACE a slice of cheddar cheese and a slice of beer cheese between two of the buttered slices of bread with the buttered sides facing outward.
PLACE the cheese sandwiches in the skillet or pan and grill until both buttered sides are nicely browned and the cheese is melted. ★TIP: If needed, cover skillet or pan with lid to help cheese melt.
4. . SERVE & ENJOY!
SERVE soup in bowls with grilled cheese sandwiches on the side. Enjoy!
