Korean Street Wings w/ Game Day Nachos

Unpack Your Kit Ingredients

local chicken wings (David's Pasture)
local gochujang sauce (Born with Seoul)
worcestershire sauce
minced garlic
unsalted butter
celery sticks
lite ranch dressing (Newman's Own)
lite blue cheese dressing (Newman's Own)

local ground beef (Steve's Meat Market)
chopped white onion
diced hatch chiles
tortilla chips (Food Should Taste Good)
local cheddar cheese (Jisa's Farmstead Cheese)
local salsa (Boys Grow)
black beans
jalapeño slices
chopped red onion
chopped tomato
chopped cilantro
lime juice
diced green onion
sour cream

Grab Your Cookware and Staples

large saucepan with lid
steamer basket or metal strainer
2 small bowls
2 large baking pans
large skillet
non-stick spray or baking pan liner
salt and pepper

Step 1: Steam the Wings

PREHEAT the oven to 400 degrees.

ARRANGE the wings in a steamer basket or metal strainer and place in a large saucepan.

ADD 2 inches of water to the saucepan and bring to a boil over high heat.

COVER the wings with a lid and steam for 10 minutes.



Step 2: Prepare the Sauce

While the wings steam...

MELT the butter in a small bowl.

STIR in the gochujang sauce, sriracha, worcestershire sauce and minced garlic. Set aside. 

Step 3: Bake the Wings

SPRAY a baking pan or use a non-stick liner (such as parchment or silpat).

TRANSFER the wings to the baking pan and pat dry. Season to taste with salt and pepper.

BAKE at 400 degrees for 15 minutes or until the wings are cooked through and starting to brown. (Be careful not to over-cook.)

Step 4: Prepare the Guacamole

While the chicken wings bake...

CUT the avocado in half and remove the pit. Scoop out the avocado into a bowl and mash until smooth.

STIR in the red onion, cilantro, lime juice, cumin and tomato.

SEASON to taste with salt and pepper.

COVER the guacamole with a lid or plastic wrap and set it in the fridge until you’re ready to serve.

Step 5: Brown the Beef

ADD the beef, chopped white onion and diced hatch chiles to a large skillet.

BROWN over medium-high heat, breaking up the beef as it cooks.

DRAIN the juices if needed.

Step 6: Assemble and Broil the Nachos

LAYER the tortilla chips, ground beef mixture, black beans, cheddar cheese and jalapeño slices in a baking pan.

REMOVE the chicken wings from the oven and set aside.

CHANGE the oven temperature to broil.

BROIL the nachos for 5 minutes. Watch carefully to prevent burning. Remove immediately when the cheese is melted.

Step 7: Serve It Up

POUR the sauce over the wings and toss to combine.

TOP the nachos with diced green onion, sour cream and additional salsa as desired.

SERVE the nachos with guacamole, wings, celery sticks and dressing. Party time!
