Lemon Herb Chicken w/ Confetti Orzo Pasta

MAIN:
local chicken breasts (Red Bird Farms or Campo Lindo Farms)
lemon pepper olive oil (Olive Tree)
lemon pepper herb blend (Happy Food Co.)
orzo pasta (InHarvest)
organic extra virgin olive oil packets
chopped zucchini
mirepoix (carrot, celery, onion)
local cheese curds (Hemme Brothers Creamery)
Garlic Expressions dressing


FROM YOUR KITCHEN

baking sheet
non-stick spray
medium saucepan
colander
small skillet
salt and pepper


1. BAKE THE CHICKEN

PREHEAT the oven to 425 degrees.

SPRAY the baking sheet with non-stick spray.

ARRANGE the chicken breasts on the baking sheet.

DRIZZLE with lemon pepper olive oil and sprinkle with lemon pepper herb blend.

BAKE for 15-20 minutes or until cooked through (no pink inside).


2. BOIL THE ORZO PASTA

While the chicken is baking...

BOIL 4 cups of water and 1 teaspoon of salt in a medium saucepan.

STIR in the orzo pasta and cook until al dente, about 10 minutes.

DRAIN in colander and rinse with cold water to stop the cooking process.


3. COOK THE VEGGIES

While the orzo pasta is boiling...

WARM the contents of olive oil packets in a small skillet over medium heat.

SAUTÉ the zucchini and mirepoix until golden, about 5 minutes. (★ What’s mirepoix? See note below.)

SEASON to taste with salt and pepper.

★ Mire-Whaaaaa?  That’s mirepoix, pronounced “meer-pwah.” This is a fancy French word for diced veggies (typically carrot, celery and onion) that add a base layer of flavor. Mirepoix is typically cooked over gentle heat to sweeten and soften the dish. 


4. SERVE & ENJOY!

COMBINE the orzo pasta and veggies.

STIR in cheese curds and Garlic Expressions dressing to your liking. Make sure to shake dressing beforehand to mix well.

SERVE with the chicken and enjoy!
