Lemon Herb Chicken w/ Confetti Orzo Pasta

lemon olive oil (Round Pond)

mirepoix (carrot, celery, onion)

Step 1: Bake the Chicken
PREHEAT the oven to 425 degrees.
SPRAY the baking sheet with non-stick spray.
ARRANGE the chicken breasts on the baking sheet.
DRIZZLE with lemon olive oil and sprinkle with italian seasoning, garlic salt, and lemon pepper.
BAKE for 15-20 minutes or until cooked through (no pink inside).
Step 2: Boil the Orzo Pasta
While the chicken is baking...
BOIL 4 cups of water and 1 teaspoon of salt in a medium saucepan.
STIR in the orzo pasta and cook until al dente, about 10 minutes.
DRAIN in strainer and rinse with cold water to stop the cooking process.
Step 3: Cook the Veggies
While the orzo pasta is boiling...
WARM the contents of extra virgin olive oil packets in a large skillet over medium-low heat.
STIR in the zucchini and mirepoix. (What’s mirepoix? See note below!)
SEASON to taste with salt and pepper.
COOK until tender, about 10 minutes.
That’s mirepoix, pronounced “meer-pwah.” This is a fancy French word for diced veggies (typically onion, celery and carrot) that add a base layer of flavor. Mirepoix is cooked over gentle heat to sweeten and soften without browning or caramelization.
Step 4: Serve It and Enjoy!
COMBINE the orzo pasta and veggies.
STIR in cheese curds and salad dressing to your liking.
SERVE with the chicken and enjoy!
