Not Yo Mama's Meatloaf w/ Blueberry BBQ Glaze 
& Roasted Potatoes

FROM YOUR KITCHEN

medium pan
non-stick spray
large bowl
loaf pan
cutting board and knife
baking sheet
salt and pepper


1. SAUTÉ THE VEGGIES

PREHEAT the oven to 375 degrees.

WARM the contents of the olive oil packets in medium pan over medium-high heat.

ADD mirepoix and sauté until golden, about 5 minutes. Season to taste with salt and pepper. (★ What’s mirepoix? See note below.)

★ Mire-Whaaaaa?  That’s mirepoix, pronounced “meer-pwah.” This is a fancy French word for diced veggies (typically carrot, celery and onion) that add a base layer of flavor. Mirepoix is typically cooked over gentle heat to sweeten and soften the dish. 


2. MAKE & BAKE THE MEATLOAF

SPRAY loaf pan with non-stick spray.

PUT ON the non-latex gloves and evenly coat the bottom and sides of the loaf pan with HALF the blueberry balsamic BBQ sauce. Keep those gloves on for the next two steps!

MIX the sautéed mirepoix, beef, pork, panko, garlic, meatloaf spice, tomato paste, sundried tomato paste, eggs and Worcestershire sauce in a large bowl with your hands.

PRESS meatloaf into greased loaf pan and top evenly with remaining blueberry balsamic BBQ sauce.

PLACE loaf pan on baking sheet and bake meatloaf on middle rack of oven for 45-55 minutes or till cooked through.


3. SEASON & ROAST THE POTATOES

While meatloaf begins to bake…

SLICE the potatoes in halves or quarters (depending on the size of the potato) on cutting board.

TOSS the sliced potatoes and onions with the contents of the bottle of olive oil and the potato seasoning on baking sheet. Season to taste with salt and pepper.

ROAST potatoes and onions on top rack of oven for 15-20 minutes or until golden and tender.

4. SERVE & ENJOY!

SERVE meatloaf with roasted potatoes on the side.
