Mediterranean Chicken w/ Pan-Fried Coconut Green Beans

1. BAKE THE CHICKEN & VEGGIES
PREHEAT the oven to 425 degrees.
SPRAY baking sheet with non-stick spray.
WASH the lemon and slice it into rings on cutting board.
PLACE the chicken breasts on a baking sheet and coat both sides with lemon olive oil. Season to taste with salt and pepper and top with lemon rings.
BAKE for 15-20 minutes or until chicken is cooked through (no pink inside) and the veggies are fork-tender.
2. MIX THE MEDITERRANEAN SALSA & SAUTÉ THE GREEN BEANS
While the chicken bakes...
COMBINE the feta cheese, heirloom tomatoes, kalamata olives, parsley, oregano and lemon juice in a medium bowl. Set aside.
HEAT olive oil in medium sauté pan over high heat. Add chili paste, coconut, and garlic. Sauté until fragrant.
ADD green beans to pan and sauté a few more minutes until green beans are bright and shiny and cooked through. Season to taste with salt and pepper and remove from heat.
3. SERVE & ENJOY!
STIR the cooked chicken pan juices into the mediterranean salsa.
SQUEEZE lemons onto the chicken topped with salsa and green beans on the side. Enjoy!
