sheep’s milk cheese (Green Dirt Farm)
organic pumpkin seeds
mixed salad greens
chopped sugar snap peas
chopped red onion

FROM YOUR KITCHEN
small pot with lid
large platter or shallow bowl
COOKCOOK THE COUSCOUS
BOIL 3/4 cup water over high heat in a small pot.
STIR in the couscous and cover with a lid.
REDUCE heat to medium-low.
COOK for 8-10 minutes or until all liquid is absorbed. Remove from heat and fluff the couscous with a fork.
PREPARE THE SALAD
ARRANGE couscous, asiago cheese, sheep’s milk cheese, pumpkin seeds, mixed salad greens, zucchini, sugar snap peas, red onion and tomato in rows on a platter or in a shallow bowl.
TOSS with desired amount of dressing, serve and enjoy!
