Mediterranean Chicken w/ Honey Roasted Veggies

1. BAKE THE CHICKEN & VEGGIES
PREHEAT the oven to 425 degrees.
SPRAY two baking sheets with non-stick spray.
WASH the lemon and slice it into rings on cutting board.
PLACE the chicken breasts on a baking sheet and coat both sides with lemon olive oil. Season to taste with salt and pepper and top with lemon rings.
ARRANGE the carrots and sweet potatoes on the other baking sheet. Season to taste with cumin, salt and pepper. Drizzle with olive oil and toss gently to combine.
BAKE for 15-20 minutes or until chicken is cooked through (no pink inside) and the veggies are fork-tender.
2. MIX THE MEDITERRANEAN SALSA
While the chicken and veggies bake...
COMBINE the feta cheese, heirloom tomatoes, Kalamata olives, parsley, oregano and lemon juice in a medium bowl.
3. SERVE & ENJOY!
STIR the chicken pan juices into the mediterranean salsa.
DRIZZLE the roasted veggies with honey.
SERVE the chicken topped with salsa and veggies on the side. Enjoy!
