Mediterranean Chicken w/ Honey Roasted Veggies

local chicken breast (Red Bird Farms or Campo Lindo Farms)
lemon pepper olive oil (Olive Tree)
chopped sweet potatoes
organic extra virgin olive oil packets
tomatoes on the vine
sliced Kalamata olives
lemon juice packets
local honey (Good Natured Family Farms)
FROM YOUR KITCHEN
2 baking sheets
cutting board and knife
salt and pepper
1. BAKE THE CHICKEN & VEGGIES
PREHEAT the oven to 425 degrees.
SPRAY two baking sheets with non-stick spray.
SLICE the lemon into rings on cutting board.
PLACE the chicken breasts on a baking sheet and coat both sides with HALF the lemon pepper olive oil. Sprinkle chicken with lemon pepper and season generously with salt and pepper. Squeeze lemon juice atop chicken and place lemon rings on baking sheet.
ARRANGE the carrots and sweet potatoes on the other baking sheet. Drizzle with contents of olive oil packets, season with cumin, salt and pepper, and toss gently to combine.
BAKE for 15-20 minutes or until chicken is cooked through (no pink inside) and the veggies are fork-tender. Discard baked lemon rings.
2. MIX THE MEDITERRANEAN SALSA
While the chicken and veggies bake...
REMOVE stems from the tomatoes on the vine and slice the tomatoes in half on cutting board.
COMBINE the sliced tomatoes, remaining lemon pepper olive oil, feta cheese, Kalamata olives, parsley, oregano and lemon juice in a small bowl. Season to taste with salt and pepper.
3. SERVE & ENJOY!
STIR the chicken pan juices into the Mediterranean salsa.
DRIZZLE the roasted veggies with honey.
SERVE the chicken topped with salsa and veggies on the side. Enjoy!
