Fiesta Cheesy Corn Soup

SAUTÉ THE CORN, CHILIES & VEGGIES
MELT butter balls in large stockpot over medium heat.
ADD poblano and serrano chilies, corn and mirepoix. Reduce heat to medium-low. Season with salt and pepper and cover with lid. Sauté until mirepoix softens, about 5 minutes.
ADD garlic and sauté until just fragrant, about 1 more minute.
ADD THE BROTH & CHEESE
MIX the vegetable broth concentrate with 3 cups hot water in a liquid measuring cup. Add to stockpot and stir to combine.
ADD whipping cream, manchego cheese and cheddar cheese. Stir to combine and bring to a boil, then remove from heat.
★TIP: Stir frequently while bringing to a boil to prevent cheese from clumping. If a smoother texture is preferred, pour 2 cups of soup at a time into a blender (Chef K recommended) and blend till desired consistency. Hold down top with a towel to prevent heat from escaping.
RE-SEASON to taste with salt and pepper. Add croutons if desired.
