Mix & Match Confetti Orzo Pasta Salad

IN YOUR BOX

orzo pasta
organic extra virgin olive oil packets
chopped zucchini
mirepoix (carrot, celery, onion)
cheese curds
Garlic Expressions dressing


FROM YOUR KITCHEN

medium saucepan
colander
small skillet
salt and pepper
medium bowl


BOIL THE ORZO PASTA

BOIL 4 cups of water and 1 teaspoon of salt in a medium saucepan.

STIR in the orzo pasta and cook until al dente, about 10 minutes.

DRAIN in colander and rinse with cold water to stop the cooking process.

COOK THE VEGGIES AND PUT IT TOGETHER

WARM the contents of olive oil packets in a small skillet over medium heat.

SAUTÉ the zucchini and mirepoix until golden, about 5 minutes.
(★ Mirepoix is a fancy French word for diced veggies, typically carrot, celery and onion, that add a base layer of flavor)

SEASON to taste with salt and pepper.

COMBINE the orzo pasta and veggies in a medium bowl.

STIR in cheese curds and Garlic Expressions dressing to your liking. Make sure to shake dressing beforehand to mix well.

SERVE and enjoy!
