Mix & Match Shrimp Thai Soup

organic extra virgin olive oil packets
chopped onion
roasted minced garlic
chili flakes
organic vegetable broth concentrate (Savory Choice)
Thai sauce (Happy Food Co.)
unsweetened coconut milk
shrimp (Seattle Fish Co.)
sliced mushrooms
chopped tomatoes
gluten-free rice crackers (Laiki Crackers)


FROM YOUR KITCHEN

large pot
liquid measuring cup
colander
salt and pepper


1. SAUTÉ THE ONION & SEASONINGS

WARM the contents of the olive oil packets in a large pot over medium heat.

ADD the oniongarlic and chili flakes.

STIR and cook about 1 minute until the ingredients start to brown. 


2. COMBINE THE REMAINING INGREDIENTS

MIX the vegetable broth concentrate with 2 cups of hot water in a liquid measuring cup.

ADD vegetable broth to the pot with onion and seasonings.

STIR in the Thai sauce and let it simmer for 5 minutes

SHAKE the can of coconut milk and pour into the soup.

INCREASE the heat to medium-high and bring the soup to a boil. 

DRAIN and rinse shrimp in colander.

STIR in shrimp, mushrooms and tomatoes.

COOK for 5 minutes. Then turn off the heat.

SERVE with rice crackers on the side and enjoy!
