Meatball Sliders w/ Couscous Chopped Salad

medium saucepan with lid
small pot with lid
large platter or shallow bowl
serrated knife and cutting board
1. WARM THE MEATBALLS
STIR together the pre-cooked meatballs and marinara in a medium saucepan.
COVER with a lid.
WARM over medium heat for 15 minutes.
2. COOK THE COUSCOUS
While the meatballs are warming…
BOIL 3/4 cup water over high heat in a small pot.
STIR in the couscous and cover with a lid.
REDUCE heat to medium-low.
COOK for 8–10 minutes or until all liquid is absorbed. Remove from heat and fluff the couscous with a fork.
3. PREPARE THE SALAD
ARRANGE the couscous, Asiago cheese, sheep’s milk cheese, pumpkin seeds, mixed salad greens, zucchini, red onion, tomato, and sugar snap peas in rows on a platter or in a shallow bowl.
4. IT’S CHOW TIME!
SLICE each bread roll horizontally with a serrated knife on cutting board and warm in microwave, if desired.
SPOON two meatballs and marinara sauce in each bread roll.
SPRINKLE with parmesan cheese and parsley.
SERVE with the salad and salad dressing (shake well).
