Mix & Match Spicy Tomato Soup

organic extra virgin olive oil packets
chopped red onion
organic fire-roasted tomatoes
roasted minced garlic
red pepper flakes
organic vegetable broth concentrate
unsweetened coconut milk


small saucepan with lid
large stockpot with lid
salt and pepper


BOIL ¾ cup of water over high heat in small saucepan.

STIR in couscous and cover with lid.

REDUCE heat to low.

COOK for 8 minutes or until all liquid is absorbed. Remove from heat.


WARM olive oil in large stockpot over medium heat.

ADD onion and sauté until lightly browned, about 5 minutes.

ADD tomatoes and cook for 5 minutes more.

ADD garlic and red pepper flakes. Stir to combine. ★TIP: For less spiciness, use less red pepper flakes.

MIX vegetable broth concentrate with 2 cups hot water in liquid measuring cup, pour into stockpot and bring soup to a boil.

COVER stockpot with lid, reduce heat to medium-low and simmer for 10 minutes.

ADD cooked couscous and coconut milk to soup. Simmer to combine and season to taste with salt and pepper.

SERVE and enjoy!
