Pho & Dumplings…Just Pho You

1. MAKE THE PHO BROTH
BOIL 5 cups of water in a large stockpot over high heat.
ADD beef pho broth concentrate, fish sauce and pho spices. Stir to combine...and take a whiff of all this deliciousness!
ADD ramen rice cakes and reduce heat to low. Cover with lid and cook until noodles are softened, about 5 minutes.
MIX the lime juice crystals with 1 tablespoon of warm water until dissolved in a small bowl.
ADD lime juice, 1 teaspoon of sesame oil, green onions, and cilantro to pho broth. Cover with lid and simmer on low while cooking dumplings.
2. COOK THE DUMPLINGS
HEAT remaining sesame oil in medium skillet over medium-high heat.
ADD vegetable & pork gyoza and sauté each side until lightly browned, about 1-2 minutes.
REMOVE pan from heat and add 4 tablespoons water to skillet (be careful of splattering).
COVER skillet with lid, place back on heat and reduce to low.
COOK and steam gyoza until water evaporates, about 5 minutes.
3. SERVE & ENJOY!
SERVE the pho broth with the gyoza and fortune cookies on the side.
