Sweet Corn & Bourbon Bread Pudding

1. PREPARE THE CRÈME SAUCE
COMBINE 1⁄2 C milk, 1 C whipping cream, and 1⁄4 tsp salt in a small saucepan. Bring to a simmer over medium-low heat.
WHISK together 3 egg yolks (dispose of egg whites or make a tasty omelet!), 1⁄4 C sugar, and 1⁄2 tsp vanilla extract in a large bowl. Slowly add 1⁄2 C of simmering milk mixture to egg yolks to temper. (★ Tempering is a process of slowly bringing up the temperature of an ingredient so it doesn’t curdle.)
ADD egg mixture to saucepan, and whisk until thickened, about 10 minutes.
REMOVE from heat and add lime zest (★ Zest is the outer peel of citrus used as flavoring) and vanilla bean seeds. ★
1. With a sharp paring knife, cut down the center of the vanilla bean, trying not to slice completely through the pod.
2. Peel the sides of the pod outward and run the side of the knife down the pod to scrape out the tiny, sticky vanilla seeds.
2. PUDDIN’ ON THE RITZ
HEAT oven to 325 degrees.
WHISK corn purée, 1 C whipping cream, 1⁄2 tsp vanilla extract, 1⁄4 tsp salt, 2 T good quality bourbon, remaining eggs, milk and sugar in same large bowl.
STIR in brioche bread.
GREASE baking dish with 1 butter ball and evenly spread bread pudding mixture.
BAKE on middle rack for 45 minutes or until set.
3. OVEN TIME, SERVE & ENJOY!
COMBINE brown sugar, whipping cream (from the small bottle), remaining vanilla extract and butter balls in a small saucepan over medium heat to make a caramel sauce.
STIR to combine and bring to a boil, then remove from heat.
POUR crème sauce, then caramel sauce over cooked bread pudding.
SERVE and enjoy!
