Chorizo Cheesy Egg Bundt

1. PREPARE THE BUNDT PAN
PREHEAT the oven to 350 degrees.
GREASE the Bundt pan with 1 butter ball. ★
1. If you don’t have a Bundt pan, grease a 9x5 baking dish (loaf size) with the butter ball.
2. Pour the egg mixture into the baking dish and bake for 1 hour, or until set.
2. PREPARE THE EGG MIXTURE
BROWN chorizo in a medium pan over medium-high heat, until cooked through. Drain grease.
HEAT remaining butter in a microwave-safe bowl.
SQUEEZE excess water from spinach. The Bundt will not want to set if this step is skipped.
COMBINE chorizo, butter, eggs, cheddar cheese, spinach and cottage cheese in a large bowl.
SEASON to taste with salt and pepper.
POUR into Bundt pan and spread evenly with a wooden spoon.
3. COOK THE BUNDT, SERVE & ENJOY!
BAKE on middle rack for 1 hour, or until set.
RUN knife around edges of Bundt pan, carefully flip onto a large plate
SERVE with hot sauce, if desired, and enjoy!
