Stuffed Pork Chops w/ Chili Coconut Garlic Green Beans

small microwave-safe bowl
cast iron grill or sauté pan
medium sauté pan

1. MAKE THE STUFFING
PREHEAT the oven to 450 degrees.
PLACE butter in small microwave-safe bowl and melt in microwave.
MIX spicy smoked mustard, parsley, dried mustard, panko and Asiago cheese with the melted butter. Set aside.
2. SEAR, STUFF & BAKE THE PORK CHOPS
SEASON both sides of pork chops with salt and pepper.
HEAT cast iron grill or sauté pan over high heat. Add pork chops and sear both sides until golden brown, about 3-5 minutes. Remove from heat.
SPRAY pie plate with non-stick spray.
PLACE seared pork chops in pie plate. Cut a ”T” in the center of each pork chop with sharp knife and fill with stuffing.
COVER pie plate with foil and bake pork chops in oven for 15 minutes for well done or bake till desired doneness.
3. SAUTÉ THE GREEN BEANS
While pork chops bake…
HEAT olive oil in medium sauté pan over high heat. Add chili paste, coconut and garlic. Sauté until fragrant.
ADD green beans to pan and sauté a few more minutes until green beans are bright and shiny. Season to taste with salt and pepper and remove from heat.
4. SERVE & ENJOY!
SERVE sautéed green beans with baked pork chops.
