Sriracha Poke Lettuce Wrap w/ Sweet Potato Tortilla Chips

Unpack Your Kit Ingredients

extra virgin olive oil*
hatch chiles
diced roasted red pepper
diced red onion
sushi grade tuna poke cubes (Seattle Fish Co.)
lime juice crystals
diced jicama
chopped cilantro
sweet potato tortilla chips (Food Should Taste Good)

*If the oil has solidified in the fridge, place the sealed container in a cup of warm water.

Grab Your Cookware and Staples

medium sauté pan
medium bowl
salt and pepper
potato masher
small pot

Step 1: Sear the Poke

HEAT the extra virgin olive oil over HIGH HEAT in a medium sauté pan.

ADD hatch chiles, roasted red pepper, chopped red onion, and tuna to pan.

SAUTÉ until tuna is just seared, about one minute. Set aside. 

Step 2: Combine the Poke

COMBINE lime juice crystals with 1 TABLESPOON of warm water in a small bowl. Stir until dissolved. 

MASH the avocado in a medium bowl with potato masher.

ADD tuna mixture, lime juice, sriracha sauce (cup), jicama, and cilantro to medium bowl.

STIR all that delicious stuff together.

★TIP: Jicama, also known as Mexican turnip, is a crisp and slightly sweet veggie. If jicama is new to you, we hope you love it!

Step 3: Do the Hokey Poke, and Shake It All About!

SEASON generously with salt and pepper.

SPOON poke mixture into lettuce for wraps. For an extra kick, add more sriracha (packets).

SERVE with sweet potato tortilla chips. Enjoy!
