Steak Tacos w/ Pineapple Salsa & Chimichurri - 2018 March Meal Kit Madness Winner!

salsa verde
chili paste
roasted minced garlic
can of jalapeños
HFCo allspice mix
organic extra virgin olive oil packets
local sliced steak (Krehbiel's)
local taco shells (Perez Food Products)
lime juice crystals
diced pineapple
local candied jalapeños (Joe's Cellar)
diced tomatoes
chopped cilantro
diced red onion

chimichurri sauce


FROM YOUR KITCHEN

small saucepot
medium sauté pan
baking sheet
small bowl
colander
cutting board and paring knife
salt and pepper


1. MAKE THE SALSA VERDE MARINADE & COOK THE STEAK

COMBINE salsa verde, chili paste, garlic, can of jalapeños and allspice mix in small saucepot over medium heat.

While the salsa verde marinade cooks…

HEAT the contents of the olive oil packets in a medium sauté pan over high heat.

ADD steak to sauté pan and season with salt and pepper. Cook until browned.

ADD salsa verde marinade to sauté pan and reduce heat to low to simmer.


2. HEAT THE TACO SHELLS

PREHEAT oven to 250 degrees.

ARRANGE taco shells on baking sheet so they don’t overlap and heat in oven for 5 minutes.

3. IT’S SALSA TIME!

MIX lime juice crystals with 1 tablespoon of warm water in small bowl until dissolved.

DRAIN pineapple in colander.

CHOP candied jalapeños on cutting board with paring knife.

ADD pineapple, candied jalapeños*, tomatoes, cilantro and red onion to lime juice and mix to combine. *The candied jalapeños are spicy, use less for milder salsa. Season to taste with salt and pepper.


4. MAKE TACOS, SERVE & ENJOY!

TURN off stove. Remove steak from salsa verde marinade and place in taco shells. Dispose of marinade.

TOP steak with pineapple salsa and chimichurri, if desired.
