Tomato Basil Frittata w/ Blueberry Parfait & Cold Brew Coffee

Unpack Your Kit Ingredients

local cheddar or havarti cheese (Jisa’s Farmstead)
local eggs (Stanberry Community Farms)
local milk (Good Natured Family Farms)
worcestershire sauce
roasted garlic
diced tomato
basil paste (Gourmet Garden)
shredded parmesan cheese

vanilla greek yogurt (Chobani)
local gluten-free granola (Granola Jones)
local cold brew coffee (Alchemy)

Grab Your Cookware and Staples

pie plate
liquid measuring cup
non-stick spray
salt and pepper

Step 1: Prepare and Bake the Frittata

PREHEAT the oven to 350 degrees.

SPRAY the pie plate with non-stick spray.

SPREAD the cheddar or havarti cheese evenly over the bottom of the pie plate.

CRACK the eggs into a liquid measuring cup.

ADD the milk, roasted garlic and worcestershire sauce, and whisk to combine.

POUR the egg mixture over the cheese in the pie plate. Season to taste with salt and pepper.

TOP with diced tomato, evenly placed dollops of basil paste and parmesan cheese.

BAKE for 35 minutes or until the middle no longer jiggles and a toothpick comes out clean.

Step 2: Prepare the Blueberry Parfaits

OPEN and STIR the yogurt cups. (Or spoon the yogurt into fancy cups if you prefer.)

TOP with blueberries and granola.

Step 3: Serve It Up

SLICE the frittata and serve with the blueberry parfaits.
